Hot chocolate is a delicious cozy drink that is perfect for warming up in the chilly months. It is a simple to make in big batches for a large family, or in small batches for a few friends. This basic drink will satisfy a chocolate lover, or anyone that wants something beside coffee or tea.
HOT CHOCOLATE VARIATIONS
There are many variations of hot chocolate around the world that vary in preparation. There are 3 main types: Basic Hot Chocolate, Mexican Hot Chocolate, and Italian Hot Chocolate.
This recipe is for Basic Hot Chocolate, and is the most common type of hot chocolate in coffee shops. This hot chocolate is made with water, milk, chocolate, cocoa powder, sugar, and other flavourings. The water is necessary in this hot chocolate because without it, the hot chocolate would be overly rich, and difficult to drink.
Mexican Hot Chocolate is a popular hot chocolate, and is made with locally grown Mexican ingredients (dark chocolate, vanilla beans, chili peppers, cinnamon sticks). It has a balanced flavour of sweet, spicy, and rich. Mexican Hot Chocolate is more complex in flavour compared to Basic Hot Chocolate.
Italian Hot Chocolate is popular in Europe, and is a thicker, richer version of hot chocolate. Cornstarch is the thickener, and the hot chocolate has the thickness of a chocolate sauce. I would recommend serving it in smaller portions because of its thick and rich flavour profile.
Heat the water, milk, and chocolate chips in a small saucepot over medium-heat.
Mix in the rest of the ingredients, and bring to a simmer.
Strain into mugs, and top with whipped cream, marshmallows, and/or chocolate sauce (optional). Enjoy!

- 1 1/2 cups full-fat milk
- 3 tbsp semisweet chocolate chips
- 2 tbsp dutch-processed cocoa powder
- 3-4 tbsp granulated sugar
- 1/4 tsp salt
- 2 tsp pure vanilla extract
