These buckeye brownies are a delicious upgrade to a plain brownie. They are a multi-tiered brownie topped with a peanut buttery frosting, and chocolate ganache. These brownies are inspired by “Buckeye” candy, which are made from peanut butter fudge dipped in chocolate. This unique snack can be made quickly, and stored for just under a week.
Bake brownies, and cool completely.
Mix together the peanut butter and butter until smooth.
Whisk in the icing sugar, vanilla extract, salt, and cinnamon until fluffy.
Spread evenly over the brownies, and chill until cooled.
Melt the chocolate and butter until smooth.
Spread over the peanut layer, and chill until the chocolate is set.
Slice in 16 squares, and store at room temperature, or the fridge.

- 2/3 cup all-purpose flour
- 1/4 cup dutch-processed cocoa powder
- 1 tsp salt
- 1 tbsp ground espresso
- 1 tsp ground cinnamon
- 6 oz bittersweet chocolate, chopped
- 1/2 cup unsalted butter, cubed
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 2 tsp pure vanilla extract
- 1/2 cup creamy peanut butter
- 1/4 cup softened unsalted butter
- 1/2 tsp pure vanilla extract
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 1/4 cups powdered sugar
- 4 oz semisweet chocolate chips
- 2 tbsp unsalted butter

In a bowl, mix together the peanut butter and butter until smooth.
