Churros are a delicious snack/dessert that originated in Spain. It is made from choux pastry, which is the base for many other delicious pastries. Churros are rolled in cinnamon sugar, and are crisp on the outside and fluffy on the inside. They are arguably a better version of mini donuts that you can buy from fairs.
In a saucepot, boil the water, milk, butter, salt and sugar.
Turn off the heat, and mix in the flour until a dough forms.
Cook the dough for a few more minutes on medium-heat until a film forms on the bottom.
Cool the dough in a bowl, before mixing in the eggs, one at a time until a sticky, stiff dough forms. Heat oil in a frying pot to 350°F.
Fill a piping bag fitted with a large star tip with the dough.
Pipe and cut 4-6 inch strips directly into the oil. Cook until golden brown on both sides.
Briefly drain the churros on a paper towel lined rack.
Toss in the cinnamon sugar while hot.

- 1/3 cup unsalted butter
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1 cup all-purpose flour
- 1 tsp pure vanilla extract
- 3 large eggs
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon

Combine the sugar and cinnamon in a shallow dish.

Briefly drain the churros on a paper towel lined rack for a few seconds.

Roll the churros in the cinnamon sugar.
