Puri is Indian fried bread that is traditionally eaten with Chole (Chickpea Curry. It is crispy, flaky, and pairs well with lots of dishes. Also, it requires only a few ingredients that you likely already have.
FRYING
To find out if your oil is heated to 350°F, dip a wooden spoon in the bottom of the pot, and if it bubbles vigorously it’s ready. Also, use a stainless-steel skimmer because it’s easier to drain the excess oil, and submerge the puri. The skimmer also allows the puri to inflate better. When frying, gently press the puri as it fries until it inflates, then baste until golden brown before flipping.
In a bowl, mix together the flour, salt, and celery seeds.
Next, mix in oil until dough becomes crumbly.
Now, gradually add water until a dough forms.
Knead on a lightly oiled surface until smooth. Rest dough while oil heats.
Divide dough into 8, and roll into smooth balls.
Roll each ball into a 6-inch circle, on a lightly floured surface.
Place the puri into the oil, press, and baste with the oil until it inflates.
Flip over, and fry until golden brown. Place on a paper towel lined colander to drain oil.

- 1 1/2 cup all-purpose flour
- 3/4 tsp salt
- 3/4 tsp celery seeds
- 2 tbsp canola oil
- 1/2 cup water

Pour in water, and mix until a dough forms.

Rest dough for about 10 minutes. Meanwhile, preheat oil in a frying pot to 350°F.

Flip over, and fry until golden brown.
