This creamy pesto fettuccine is one of the best pasta dishes. It is rich, yet not too heavy, and is simple to make. I recommend using fresh pasta, but you can use dried pasta. Also, you can use different pastas, like linguine or penne instead of fettuccine.
Blend all the ingredients for the pesto in a blender or food processor, (expect the oil). Once smooth. stream in the oil, while blending.
Boil the pasta until al dente, (2-4 minutes for fresh pasta, dried pasta 8-12 minutes).
Pasta into a pan with the pesto, cream, and the pasta water. Cook until the sauce becomes thick.
Serve with parmesan and chicken, if preferred. Enjoy!
- 2 cups fresh basil
- 1/4 cup pan-toasted pine nuts
- 2 cloves garlic
- 2 tsp fresh lemon juice
- 1/4 cup parmesan
- 1/3 cup olive oil
- salt and pepper
- fettucine pasta, fresh or dried
- 1/4 cup pasta water
- 2 cups heavy cream
